What You Need:            (To Serve: 6)

  • 1 large head romaine, washed, dried, torn into bite-size pieces, and chilled
  • 1 large green pepper, cleaned and cut into strips
  • 1 large red pepper, cleaned and cut into strips
  • 1 medium-sized cucumber, peeled and sliced thinly
  • 4 scallions, cleaned and sliced, with some tops
  • ½ cup plain yogurt
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, crushed
  • 2 tablespoons chopped fresh herbs (chervil, dill, parsley, tarragon, or basil)
  • Salt, pepper to taste

  • How To Cook:
    1. Combine romaine, peppers, cucumbers, and scallions in a salad bowl.

    2. Mix remaining ingredients; add to salad; toss.

    3. Serve at once.
