1 large green pepper, cleaned and cut into strips
1 large red pepper, cleaned and cut into strips
1 medium-sized cucumber, peeled and sliced thinly
4 scallions, cleaned and sliced, with some tops
½ cup plain yogurt
2 tablespoons fresh lemon juice
1 garlic clove, crushed
2 tablespoons chopped fresh herbs (chervil, dill, parsley, tarragon, or basil)
Salt, pepper to taste

1. Combine romaine, peppers, cucumbers, and scallions in a salad bowl.
