What You Need:
(To Serve: 6 - 8)

3 whole chicken breasts
Salt, pepper to taste
About 2/3 cup mayonnaise or 1/3 cup mayonnaise and 1/3 cup sour cream
2 tablespoons grated lemon rind
½ pound seedless white grapes cut in halves
3 ounces almond slivers, toasted

How To Cook: |
|
|
1. Remove skin from chicken breasts and sprinkle with salt and pepper.
|
2. Put in a large skillet or saucepan with about 1 inch water. Bring to a boil.
|
3. Lower heat and cook slowly, covered, about 25 minutes, or until tender.
|
4. Take from skillet and cool. Remove meat from breasts.
|
5. Discard bones and remove any gristle from meat. Cut meat into bite-size pieces and put in a large bowl.
|
6. Add remaining ingredients and mix well. Season with salt and pepper.
|
7. Serve over lettuce leaves, sliced tomatoes, or avocados, if desired.
