A popular summer salad in Mediterranean countries is made with eggplants and various seasonings. It is called by a diverse selection of names, but one of the most popular is poor man's caviar.

What You Need:
(To Serve: 6 - 8)

1 medium-sized eggplant, about 1¼ pounds
2 to 3 garlic cloves
½ cup chopped scallions, with some tops
2 medium-sized green peppers, cleaned and chopped
1 large tomato, peeled and chopped
3 tablespoons fresh lemon juice
1/3 to ½ cup olive oil
Salt, pepper to taste

How To Cook: |

|
1. Prick eggplant in several places and put on a cookie sheet.
|
2. Bake in a preheated 400°F oven until soft, about 50 minutes.
|
3. Cool until able to handle. Peel off and discard skin.
|
4. Put pulp in a bowl; chop with a wooden spoon or knife. Pour off all liquid.
|
5. Add remaining ingredients and mix well.
|
6. Allow to stand to blend flavors at room temperature or in the refrigerator 1 to 2 hours.

7. Serve with pieces of pita bread or chunks of crusty French bread.
