This traditional Bulgarian salad is called 'shopska salata', a name that is derived from the village of Shopka on the outskirts of Sofia. Serve with grilled or skewered lamb or pork.

What You Need:
(To Serve: 4 - 6)

4 medium-sized green or red peppers, cleaned and cut into strips
1 medium-sized cucumber, peeled and thinly sliced
4 large tomatoes, peeled and thinly sliced
2 medium-sized onions, peeled and thinly sliced
1/3 cup olive oil
2 tablespoons lemon juice or vinegar
3 tablespoons mixed fresh herbs (dill, parsley, or basil)
Salt, pepper to taste
½ cup diced white Feta or farmer cheese

1. Place peppers, cucumber, tomatoes, and onions in circles, overlapping each other, on a large plate.

2. Combine remaining ingredients, except cheese, and pour over vegetables.

3. Sprinkle with cheese.
