What You Need:            (To Serve: 6)

  • 2 cups cold, cooked asparagus tips
  • ¼ cup sliced scallions, with some tops
  • 3 tablespoons vinaigrette dressing
  • 4 cups cubed cold, cooked white-fleshed fish (cod, flounder, halibut, haddock)
  • 1 cup mayonnaise or salad dressing
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon prepared sharp mustard
  • 2 tablespoons chopped fresh parsley
  • Salt, pepper to taste
  • 2 cups cut-up cold, cooked green beans
  • 1/3 cup chopped blanched almonds

  • How To Cook:
    1. Combine asparagus tips, scallions, and vinaigrette dressing.

    2. Spoon into center of a round platter or large plate.

    3. Mix fish, mayonnaise or salad dressing, lemon juice, mustard, parsley, salt, and pepper.

    4. Spoon to form a ring around asparagus mixture.

    5. Surround with green beans and sprinkle them with almonds.
