2 cups cold, cooked asparagus tips
¼ cup sliced scallions, with some tops
3 tablespoons vinaigrette dressing
4 cups cubed cold, cooked white-fleshed fish (cod, flounder, halibut, haddock)
1 cup mayonnaise or salad dressing
2 tablespoons fresh lemon juice
1 tablespoon prepared sharp mustard
2 tablespoons chopped fresh parsley
Salt, pepper to taste
2 cups cut-up cold, cooked green beans
1/3 cup chopped blanched almonds

How To Cook: |

|
1. Combine asparagus tips, scallions, and vinaigrette dressing.
|
2. Spoon into center of a round platter or large plate.
|
3. Mix fish, mayonnaise or salad dressing, lemon juice, mustard, parsley, salt, and pepper.
|
4. Spoon to form a ring around asparagus mixture.
|
5. Surround with green beans and sprinkle them with almonds.
|
|
|
