What You Need:
(To Serve: 4)

1 medium-sized bitter melon, about ¾ pound, washed
Salt
1 medium-sized cucumber, peeled and sliced
½ cup sliced scallions, with some tops
½ cup sliced white or red radishes
1/3 cup salad oil
2 to 3 tablespoons white vinegar
2 teaspoons soy sauce
Salt, pepper to taste

How To Cook: |
|
|
1. Cut off and discard ends of the bitter melon.
|
2. Split in half lengthwise and cut out and discard the white center portion of each slice.
|
3. Cut into slices about ¼ inches thick.
|
4. Put in a bowl and sprinkle with salt. Let stand about 15 minutes.
|
5. Squeeze to completely remove all liquid. Wash and dry.
|
6. Combine with cucumber, scallions, and radishes.
|
7. Add remaining ingredients and refrigerate until ready to serve.

TIP:
|
If canned bitter melon is used, merely drain, slice, and combine with other ingredients.
