1 pound fresh spinach leaves
1/3 cup salad oil
6 scallions, cleaned and sliced, with some tops
½ cup sliced radishes
2 cups sliced raw cauliflower flowerets, washed and dried
2 to 3 tablespoons wine vinegar or fresh lemon juice
1 garlic clove, minced or crushed
6 flat anchovies, drained and minced
Salt, pepper to taste

How To Cook: |

1. Wash spinach; cut off tough stem ends; remove bruised leaves; dry; refrigerate or put in a salad bowl.
|
2. Add oil; toss lightly.
|
3. Add remaining ingredients; toss.
|
4. Serve at once.
