This curry-flavored chicken salad, called "honssallad", is a Swedish smorgasbord specialty, but it may also be served as a luncheon entree.

What You Need:
(To Serve: 4 - 6)

3 cups diced cold, cooked chicken
½ cup mayonnaise
1/3 cup sour cream
2 to 3 teaspoons curry powder
Salt, pepper to taste
Crisp lettuce leaves, washed and dried
2 hard-cooked eggs, shelled and cut into wedges
6 stuffed olives, sliced
2 tablespoons capers, drained
3 tablespoons finely chopped dill pickles

How To Cook: |
|
|
1. Combine chicken with mayonnaise, sour cream, and curry powder.
|
2. Season with salt and pepper and mix well.
|
3. Refrigerate 1 hour or longer to blend flavors.
|
4. When ready to serve, arrange lettuce leaves on a platter and spoon salad over them.
|
5. Decorate with remaining ingredients.
