What You Need:            (To Serve: 6)

  • 4 cups cold, shelled, cooked shrimp
  • 2 cups coarsely chopped grapefruit sections
  • ½ cup diced celery
  • ¼ cup minced green onions
  • 1 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons curry powder
  • Crisp lettuce leaves, washed and dried
  • ½ cup almond slivers

  • How To Cook:
    1. Combine first four ingredients in a bowl.

    2. Mix mayonnaise, lemon juice, and curry powder.

    3. Add to shrimp mixture and mix well.

    4. Refrigerate 1 hour to blend flavors.

    5. Serve on lettuce leaves, garnished with almonds.
