What You Need:

1 or 2 peeled garlic cloves cut into slivers
1/3 cup olive oil
1 large head romaine, washed, dried, torn into bite-size pieces, and chilled
2 tablespoons fresh lemon juice
1 cup croutons
½ teaspoon dried basil or oregano
Salt, pepper to taste
2 medium-sized tomatoes, peeled and cut into wedges
1/3 cup grated Parmesan cheese
4 to 6 flat anchovy fillets, drained and minced

How To Cook: |
|
|
1. Put garlic slivers and oil in a salad bowl; leave 1 hour.
|
2. When ready to serve, remove and discard garlic.
|
3. Add romaine; toss lightly.
|
4. Add lemon juice, croutons, basil or oregano, salt, and pepper; toss.
|
5. Mix in tomatoes, cheese, and anchovies; toss.
