What You Need:            (To Serve: 4)

  • 1 package (10 ounces) fresh spinach
  • 1 large onion, peeled, sliced, and separated into rings
  • 2 hard-cooked eggs, shelled and chopped
  • 1 medium-sized ripe avocado, peeled and cubed
  • ¼ cup olive or salad oil
  • Juice of ½ lemon
  • 1 tablespoon wine vinegar
  • 1 garlic clove, crushed
  • Salt, pepper to taste
  • 3 tablespoons chopped fresh coriander or parsley

  • How To Cook:
    1. Wash spinach; cut off tough stems; remove bruised or wilted leaves; dry; tear large leaves into bite-size pieces; refrigerate.

    2. When ready to serve, put in a salad bowl.

    3. Add onion, eggs, and avocado; toss lightly.

    4. Combine remaining ingredients, except coriander or parsley; toss.

    5. Serve at once sprinkled with coriander or parsley.
