A favorite Scottish salad, it is made with tomatoes and scallions and served as an accompaniment to cold roast meat or poultry.

4 large tomatoes, peeled and sliced
1 cup sliced scallions, with some tops
3 tablespoons salad oil
1 tablespoon cider vinegar
1 teaspoon sugar
Salt, pepper to taste

1. Arrange tomato slices, overlapping, in a serving dish.
|
2. Sprinkle with scallions.
|
3. Combine remaining ingredients and spoon over tomatoes.
|
4. Let stand at room temperature 30 minutes before serving.
