8 tablespoons olive oil
3 tablespoons butter or margarine
1½ cups stale bread cubes
4 large tomatoes, peeled and sliced
1½ tablespoons wine vinegar
½ teaspoon dried basil
Salt, pepper to taste
2 tablespoons drained capers
2 tablespoons chopped fresh parsley

How To Cook: |

|
1. Heat 3 tablespoons oil and the butter or margarine in a medium skillet.
|
2. Add bread cubes and saute until golden brown. Put in a preheated 275°F oven for 25 minutes.
|
3. Drain on absorbent paper. Arrange in layers with tomato slices in a salad bowl.
|
4. Combine remaining oil, the vinegar, basil, salt, and pepper; spoon over tomato-bread mixture.
|
5. Sprinkle with capers and parsley. Serve at once.
