What You Need:            (To Serve: 4 - 6)

  • 4 large ripe tomatoes
  • 1 medium cucumber, peeled and diced
  • 6 scallions, cleaned and sliced, with some tops
  • ¼ cup olive oil
  • 2 garlic cloves, crushed
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • ½ teaspoon ground cumin
  • Salt, pepper to taste

  • How To Cook:
    1. Peel and slice tomatoes.

    2. Arrange on a serving dish and top with cucumbers and scallions.

    3. Combine remaining ingredients and pour over salad.

    4. Serve at once.
