A refreshing combination of yogurt and vegetables with seasonings is called 'rayta' or 'raita' in India. It is traditionally served with curries but also goes well with roast meats and grilled poultry. Other vegetables, raw or cooked, may be substituted for the tomatoes, if desired.

½ cup minced onions
1 cup diced peeled tomatoes
¼ cup minced green peppers
1 teaspoon ground cumin
Salt, pepper to taste
¼ cup chopped fresh coriander or parsley
