What You Need:            (To Serve: 4)

  • 2 cups sliced, cleaned fresh mushrooms
  • 2 cups diced, cooked white meat of turkey
  • 1 cup diced, peeled, and seeded cucumber
  • 1/3 cur olive or salad oil
  • 2 tablespoons wine vinegar
  • Salt, pepper to taste
  • 1 cup cold, cooked green peas
  • ½ cup sour cream
  • 1 tablespoon chopped fresh dill or 1teaspoon dried dill weed
  • Crisp lettuce leaves, washed and dried
  • ¼ cup toasted, blanched almond slivers

  • How To Cook:
    1. Put mushrooms, turkey, and cucumber in a medium bowl.

    2. Add oil, vinegar, salt, and pepper.

    3. Allow to marinate, mixing ingredients occasionally, for 1 hour.

    4. When ready to serve, add peas, sour cream, and dill.

    5. Spoon over lettuce leaves and sprinkle with almonds.
