In West African countries, the yam is an important staple food. It is grown in over fifty varieties and is used to make a largo number of dishes ranging from appetizers to salads. Yams are very high in protein and can be either quite small or exceedingly large. Use sweet potatoes as a substitute, if desired. Serve with barbecued or roast chicken or pork.

3 hard-cooked eggs, shelled and sliced
1 medium-sized onion, peeled and chopped
2 medium-sized tomatoes, peeled and cut into wedges
¼ cup peanut oil
2 tablespoons fresh lemon juice
Salt, pepper to taste
