This salad is unusual because it is possibly the only one that is served with a molasses-flavored dressing. Yorkshire dishes are hearty and imaginative, and many of them include a rich, dark molasses.

2 small heads leafy lettuce, washed, dried, torn into bite-size pieces, and chilled
½ cup sliced scallions, with some tops
About 1/3 cup vinegar
3 to 4 tablespoons molasses
Salt, pepper to taste
