1. Prepare batter. Stir in mashed bananas and vanilla extract.

2. In a deep skillet or saucepan, heat 2 inches of oil to 375°F degrees.

3. Drop rounded spoonfuls of fritter mixture into hot oil and fry until golden brown on both sides, turning once.

4. Remove fritters; drain on absorbent paper.
|
5. Sprinkle with powdered sugar and serve immediately.
