How To Cook: |

1. Place chicken in a large pot and cover with water. Bring to a boil and simmer 1 to 1½ hours or until done.

2. Remove chicken. Reserve stock.
|
3. Prepare rice or noodles. Cut chicken into pieces and arrange over rice or noodles.
|
4. Heat vegetable oil and saute onion until translucent.
|
5. Mash cashew nuts. Stir in nuts and 1 cup chicken stock.
|
6. Add salt and hot pepper sauce to taste. Pour sauce over chicken.
