What You Need:

1 pound pasta, cooked, drained & rinsed
2 cups ground conch
2 tablespoons olive oil
4 garlic cloves, minced
¼ cup green onions, chopped
1 tomato, peeled and chopped
½ cup tomato puree
1 cup tomato juice
¼ cup fresh basil, chopped
¼ cup fresh parsley, chopped
¼ cup butter

How To Cook: |
|
|
1. Prepare pasta; set aside. Heat oil and saute garlic and green onions for 3 minutes.
|
2. Add fresh tomato and saute 3 minutes.
|
3. Stir in tomato puree and juice; simmer 30 minutes.
|
4. Add conch; simmer another 30 minutes.
|
5. Add herbs and butter. Serve over pasta.
