What You Need:
(To Serve: 4 - 6)

1½ pounds mahi-mahi fillets (or other)
1/3 cup lime juice
3 tablespoons soy sauce
1 tablespoon vegetable oil
¼ teaspoon each: ground red pepper, garlic powder, ground coriander, cinnamon and dried mint

How To Cook: |
|
|
1. Combine all ingredients, except fish, in a jar; cover and shake to mix.
|
2. Place fillets in a glass baking dish; pour marinade over fish.
|
3. Cover and refrigerate 30 minutes to 1 hour.
|
4. Place on a greased broiler rack and broil 5 to 6 inches from heat, turning halfway through cooking.
|
5. Allow about 10 minute's total cooking time for each 1-inch thickness of fillets.

May use swordfish, halibut, salmon, chilean sea bass or tuna.
