What You Need:            (To Serve: 4)

  • 2 tablespoons vegetable oil
  • 1 pound okra, young, tender, rinsed, patted dry & caps trimmed
  • Sprinkle of salt and pepper
  • ½ cup water
  • 2 tablespoons lime juice
  • 2 garlic cloves, finely minced
  • ¼ teaspoon ground allspice
  • 1-2 drops Hot Pepper Sauce
  • Dried tomato, diced, and chopped cilantro for garnish

  • How To Cook:
    1. Heat 1 tablespoon oil in frying pan.

    2. Add okra and saute for 2 minutes.

    3. Sprinkle with salt and pepper.

    4. Add water, cover and cook over low heat for about 7 minutes, or until tender.

    5. Add more water if needed. Transfer to a serving plate.

    6. Combine remaining 1 tablespoon oil, lime juice, garlic, allspice and Hot Pepper Sauce.

    7. Pour over okra. Sprinkle with tomato and cilantro.
