2 pounds beef or mutton stew meat, cubed
2 quarts water
¼ head of cabbage, chopped
2 tablespoons cooking oil
2 tablespoons flour
1 celery stalk, chopped
2 onions, chopped
2 dozen okras, finely chopped
4 large tomatoes, chopped
½ teaspoon thyme
Salt and pepper to taste
OPTIONAL VEGETABLES
Corn, carrots or potatoes, diced

How To Cook: |
|
|
1. Combine meat and cabbage into a large kettle with water.
|
2. Heat to boiling, lower heat and simmer until tender.
|
3. Heat oil in skillet, add flour and brown slowly.
|
4. Add celery, onions, okras and tomatoes.
|
5. Lower heat, stir and cook until tender, about 5 minutes.
|
6. Add vegetables to meat stock. Add seasonings.
|
7. Cook uncovered an additional 20 minutes.
