What You Need:            (To Serve: 4)

  • 2 pounds sweet potatoes
  • ½ cup butter
  • 4 - 5 tablespoons sugar, to taste
  • ½ cup light cream (or sour cream)
  • 2 eggs, beaten
  • Pinch of cinnamon and/or all spice
  • Miniature marshmallows to cover

  • How To Cook:
    1. Boil potatoes until tender. Slip skins off, place in mixing bowl and mash well.

    2. Stir in remaining ingredients, except marshmallows. Mix well.

    3. Spread mixture into a 1-quart buttered baking dish and bake at 350°F degrees until center is set, about 30 to 40 minutes.

    4. Remove from oven and place marshmallows over top.

    5. Return to oven for a few minutes until marshmallows are lightly browned.
