1 young chicken
2 - 3 oz butter
1 - 2 large onions
¼ pint South African dry white wine
1 - 2 green chilies
Salt, pepper a little grated nutmeg

How To Cook: |
|
|
1. Joint a young chicken and lightly fry the pieces in butter in a saucepan until golden-brown.
|
2. Take out and keep hot.
|
3. Thinly slice onions and fry until they too are golden-brown.
|
4. Put the chicken back in the pan; add dry white wine, salt, pepper, green chilies and a little grated nutmeg.
|
5. Cover and simmer very slowly until the chicken is tender.
