How To Cook: |

1. Blanch the ox tongue in boiling water, and then rinse it in cold water.

2. Crush a garlic clove with some salt; peel onions; scrape a carrot and put all these in a sauce pan with a bouquet garni and some seasoning.

3. Add the tongue, cover with cold water, bring to the boil and simmer, covered, for 2-3 hours.
|
4. Remove the tongue from the pan, skin it and keep hot while boiling up and reducing the liquor.
|
5. Put the tongue back in the saucepan, add ½ glass white wine and a few cut-up mushrooms and cook until tender.
|
6. Serve with the sauce poured over it.
