What You Need:            (To Serve: 2 - 4)

  • 1 pound tomatoes
  • Salt and pepper
  • 1 pound butter beans
  • Meat trimmings
  • 1 shallot

  • How To Cook:
    1. Wash and quarter the tomatoes, put into a saucepan, season and stew, covered, until soft, and then sieve them.

    2. Rinse the saucepan and put in the beans, the sieved tomato sauce and seasonings to taste; simmer gently uncovered.

    3. Brown the meat trimmings and finely chopped shallot in a little oil and add the contents of the frying pan to the beans and tomato sauce.

    4. Cook gently until the beans are just tender and the liquid is reduced to a thick sauce.

    5. Serve as an accompanying vegetable with meat.
