1 egg
½ pint olive oil (approx)

1. Make the pastry sheets as described in this recipe.

2. Pound the cheese in a mortar.
|
3. Fold 2 teaspoons cheese in a sheet of pastry, making a pasty about 4 inches across.

4. Seal the edges of the pastry with a beaten egg, then brown on both sides in hot oil.
