What You Need:
(To Serve: 4 - 6)

1 chicken
1 oz butter
2 chopped onions
4 chopped tomatoes
1 small tin of tomato paste
2 cloves of garlic, chopped
1 red pepper, chopped
1 - 1½ tablespoons curry powder
Salt and pepper
1½ pints stock (chicken if possible) or 1 bouillon cube dissolved in water
Flour to thicken (optional)
Hard-boiled eggs

How To Cook: |
|
|
1. Joint the chicken and fry in the butter.
|
2. Add the onion, tomatoes, tomato paste, garlic, red pepper, curry powder and seasonings and fry for a few minutes.
|
3. Add the stock and simmer for 1-2 hours. Thicken with flour if desired.
|
4. Add 2-3 sliced hard-boiled eggs before serving.
|
5. Serve with boiled rice and a variety of side dishes in small bowls.
|
6. These can include bananas, red peppers, oranges and avocado, all cut up very small; groundnuts, small chips, fried bread cubes and fried onion and banana can also be served.
|
7. This curry is usually served buffet style.
