¼ pound grated coconut
¼ pound sifted sugar
4 egg whites
Juice and grated rind of ½ lemons
1 oz butter

1. Mix the coconut, butter, sugar, lemon juice and grated rind.

2. Whisk the egg white stiffly and fold into mixture.
