How To Cook: |

1. Chop stoned packet dates, and then fry in a little hot oil until very soft.

2. Pound with caster sugar, ground cinnamon and ground ginger.
|
3. Fry 1 pound semolina in some hot (not smoking) oil until the grains are just beginning to turn color.
|
4. Put a layer of half the fried semolina at the bottom of a flat dish, cover with a layer of the dates, and then add the rest of the semolina.
|
5. Cut into diamond shapes and fry in smoking hot oil, put at once into a bowl of honey or sugar syrup and serve immediately.
