3 pound mutton
½ cup dried apricots
3 large onions
2 tablespoons dripping
6 lemon or orange leaves (when available)
1 tablespoon salt
3 tablespoons vinegar

How To Cook: |

|
1. Cut mutton in small, thin, round pieces and put in a dish with pieces of fat in between.
|
2. Soak dried apricots overnight, boil them and press through a sieve.
|
3. Slice onions with a piece of garlic and fry in 2 tablespoons dripping.
|
4. Mix together the apricots, onions, some cayenne pepper, lemon or orange leaves, salt and vinegar and boil all together for a minute.
|
5. Let it cool, and then pour over the raw meat and leave to soak overnight in the sauce.
|
6. Grill (or fry) the meat, boil up the sauce again and pour over the cooked pieces of meat.
|
7. Serve with rice.
