2 pound mutton cut in small chunks
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground ginger
½ teaspoon powdered saffron
1½ teaspoons chopped chervil
3 pieces of cinnamon bark
4 small and 4 large onions
½ pint olive oil
1 tablespoon ground cinnamon
½ tablespoon chopped parsley
4 tablespoons sugar (or liquid honey)

How To Cook: |

|
1. Mix the mutton with the salt, pepper, ginger, a pinch of saffron, 1 tablespoon chervil, and the cinnamon bark, the small onions cut in pieces, the olive oil and nearly 1 quart water.
|
2. Simmer for 1 hour, or until the meat is almost cooked, then take out the cinnamon bark and spread the meat in a flameproof casserole.
|
3. Slice the large onions and cover the meat with them.
|
4. Mix the remaining ingredients (except the sugar) with the meat liquor and pour over the onions and meat.
|
5. Cook for ½ hour, and then sprinkle the sugar or honey over all.
|
6. Grill for 15 minutes, until browned; serve in the same dish.
