1 chicken
½ tablespoon chervil
½ tablespoon leek
2 tablespoons butter
1 teaspoon cumin
1 teaspoon red pepper

How To Cook: |

1. Prepare the chicken.
|
2. Pound the chervil and leek together in a mortar and mix with the butter, cumin and red pepper to make a paste.
|
3. Roast the chicken on a turning spit, spreading the paste over it with a knife.
|
4. When the chicken is nearly cooked, make some cuts in the breast and put in more of the paste.
|
5. This dish can be served hot or cold.
