What You Need:
(To Serve: 6 - 8)

3 pound lean pork fillet
3 or 4 large onions
A little fat for frying
2 garlic cloves
Salt
Black pepper
2 teaspoons lemon juice
4 skinned tomatoes
1 tablespoon sugar
2 teaspoons piquant table sauce
½ pound strong Cheddar cheese
1 or 2 chilies
1 packet flat noodles

How To Cook: |
|
|
1. Dice the pork removing the sinews.
|
2. Chop the onions and fry with the pork using very little extra fat.
|
3. Add the crushed garlic, salt, pepper, chilies, lemon juice, tomatoes, sugar and piquant sauce and simmer gently until tender.
|
4. Grate the cheese and stir into the mixture; do not cook after the cheese has been added.
|
5. Cook the noodles in boiling salted water, after breaking them into short lengths, and fold gently into the pork mixture.
