What You Need:            (To Serve: 4 - 6)

  • 1 pound semolina
  • Salt and pepper
  • Oil for frying
  • ¾ - 1 pound tomatoes
  • ½ pound brown lentils
  • ½ pound shelled broad beans

  • How To Cook:
    1. Mix the semolina with some salt and enough water to make a stiff paste, and then roll into little finger-shaped pieces.

    2. Quarter the tomatoes and fry them in hot oil, then keep them hot.

    3. Fry the semolina fingers, seasoning them with salt and pepper.

    4. Boil the lentils and the broad beans separately, mix all together and serve if desired with fried sausages.
