3 pigeons
5 tablespoons ground almonds
1 tablespoon raisins, stoned
1 teaspoon ground cinnamon
½ tablespoon finely chopped parsley
1 tablespoon caster sugar
¾ pint olive oil (approx)

How To Cook: |

|
1. Clean the pigeons.
|
2. Mix the dry ingredients well with a little water, stuff the birds with this and sew up.
|
3. Then cook them with the giblets in a covered pan, basting with the oil, until they are done.
|
4. Serve in a flat dish with the oil in which they have been cooked.
