4 beaten eggs
1 handful chopped parsley
½ teaspoon salt
½ teaspoon pepper
8 tablespoons olive oil

How To Cook: |

1. Prepare the whitebait.
|
2. Mix together the eggs, parsley, salt and pepper.
|
3. Cook the fish in the oil with 2 tablespoons water, then pour in the egg mixture and stir gently until the egg is set.
