2 long, thin cucumbers
1 tablespoon soya sauce
½ cup minced pork
1 teaspoon salt
½ cup dry breadcrumbs
¼ teaspoon sugar
1/8 teaspoon peeled and shredded ginger root, or ¼ teaspoon powdered ginger
¼ teaspoon monosodium glutamate
1 - 2 tablespoons cooking oil
1 tablespoon red wine vinegar

How To Cook: |
|
|
1. Wash, peel and trim the cucumbers; cut across into slices about 1½ inches thick and hollow out the centre.
|
2. Mix the pork with the remaining ingredients, except the oil, and pack into the cucumbers.
|
3. Heat the oil in a saucepan, stand the stuffed cucumbers in the oil and cook gently until tinged with brown, then turn and brown the other end.
|
4. Add ¼ cup water, cover, turn the heat low and continue cooking for 8-10 minutes longer.
|
5. The cucumbers should be tender but not soft, and the pork done through.
