What You Need:            (To Serve: 2 - 4)

  • 1 pound tomatoes
  • 1 - 2 eggs
  • 2 - 4 tablespoons fresh cream
  • Salt and pepper
  • Hot buttered toast

  • How To Cook:
    1. Peel and quarter the tomatoes and simmer them in their own juice until cooked.

    2. Add the well-beaten eggs, the cream and seasonings to taste and cook, preferably over boiling water, until the mixture thickens.

    3. Serve at once on the hot toast.
