A 3-4 pound chicken
6 oz rice
1 onion
2 oz butter
3 oz sultanas
A little ground cinnamon
A little grated nutmeg
Salt and pepper to taste
Fat for roasting and basting

How To Cook: |
|
|
1. Prepare the chicken in the usual way.
|
2. Put the washed rice and finely chopped onion into 1 quart boiling salted water and cook until tender; drain.
|
3. Heat the butter; add the rice, sultanas and seasonings and cook, stirring well.
|
4. Put into a basin and leave till cold, then use to stuff the chicken. Roast as usual, basting as required.
