4 - 6 oz whitebait
2 eggs
½ teaspoon salt
Pepper
2 large tablespoons fine, soft white breadcrumbs
Butter for frying

How To Cook: |
|
|
1. Wash the whitebait and dry in a cloth.
|
2. Beat the eggs, add the other ingredients and blend well. Heat a knob of butter in a frying pan.
|
3. Drop tablespoons of the mixture into the fat, and fry on both sides.
|
4. Serve hot with lemon slices
|
