What You Need:
(To Make: 1 pie)

1 pound minced chicken (or any other meat)
Salt and pepper
3 egg yolks
1 chopped onion
2 tablespoons sugar
2 tablespoons oil
2 egg whites
2 dried peaches
2 oz flour
2 oz green olives
2 hard-boiled eggs
1 tablespoon raisins
Ground cinnamon
1 egg, beaten

How To Cook: |

|
1. Saute the meat and the chopped onion in the oil, add the diced peaches, the olives and raisins and cook about 4 minutes; stir in egg and seasoning.

2. Beat separately the 3 egg yolks with sugar and the 2 egg whites with salt. Mix them carefully, and then add the flour.
|
3. Turn half this mixture into a buttered fireproof dish and bake in a moderate oven (350°F) for about 10 minutes.
|
4. Put the meat on top, add the 2 sliced hard-boiled eggs and sprinkle with ground cinnamon.
|
5. Cover with remaining egg mixture and cook in a hot oven (450°F) until brown.
