What You Need:

1 onion
1 oz butter
1 teaspoon chopped parsley
¼ teaspoon chopped thyme
1 tablespoon rich stock
1 hard-boiled egg, chopped
A few raisins
About ½ pound cold cooked meat or chicken, minced
1 egg yolk
1 pound mashed potatoes
Corn flour
Olive oil for deep frying

How To Cook: |
|
|
1. Fry the chopped onion in the butter and add the herbs arid stock.
|
2. Add the hard-boiled egg, raisins and minced meat or chicken.
|
3. Cool this mixture a little and roll into small balls, using a little flour on the hands and board.
|
4. Add the egg yolk to the hot mashed potatoes and beat well.
|
5. Cover the meat balls with the potato and form into egg-shaped croquettes; roll them in corn flour and fry in hot oil.
