1½ - 2 pound lightly poached white fish (haddock, flounder, etc.)
2 bay leaves
1 teaspoon sugar
1 tablespoon tomato puree
1 cup olive oil
2 - 3 garlic cloves, crushed
1 cup white wine vinegar
6 medium-sized onions, very thinly sliced
A dash of pepper
½ teaspoon salt

How To Cook: |

|
1. Marinade the fish overnight in a mixture made by combining all the ingredients except the onion rings.
|
2. Arrange the onions on top of the fish.
|
3. The next day, drain the fish and serve cold, with tomato and potato salad.
