What You Need:            (To Make: 12 large meringues)

  • 2 egg whites
  • 6½ oz caster sugar
  • 1 teaspoon corn flour
  • 6 oz stoned dates
  • 3 oz chopped walnuts

  • How To Cook:
    1. Whisk the egg whites until stiff. Add the sugar and corn flour.

    2. Place in the top of a double boiler and cook for 7 minutes, stirring constantly.

    3. Add the dates and nuts.

    4. Drop in teaspoonfuls on a buttered baking sheet.

    5. Bake in a slow oven (300°F) for 30 minutes or until golden-brown.
