1 large or 2 small white fish
2 oz fat
Onion
Tomatoes
4 red peppers
Salt
Lemon juice
Parsley
Butter
Flour

How To Cook: |

|
1. Melt fat in a saucepan and add some chopped onion, some tomatoes, cut into small pieces, red peppers.
|
2. Prepare white fish, season with salt and lemon juice, slice and put on top of the vegetables.
|
3. Add some chopped parsley and cover with greaseproof paper or metal foil (the original recipe calls for banana leaves).
|
4. Cook over a very gentle heat until the fish is done but not broken up.
|
5. Blend some butter, flour and fish liquor, boil up and pour over the fish.
