What You Need:            (To Serve: 4 - 6)

  • 1 pound white maize
  • ½ teaspoon bicarbonate of soda
  • 4 pints water

  • How To Cook:
    1. Place the maize in a saucepan with the water and cook over a low heat for about 3 hours, stirring frequently with a wooden spoon.

    2. After the first hours add the bicarbonate of soda.

    3. The grains should be tender and creamy.

    4. Serve hot with sugar or honey, or if preferred cold, with sugar and a little milk.
