What You Need:            (To Serve: 4 - 6)

  • 2 breakfast cups rice
  • Fat
  • 4 breakfast cups boiling water
  • 1 egg for each person
  • 1 banana for each person
  • Onion
  • Tomato
  • Parsley

  • How To Cook:
    1. Heat a little fat in a saucepan then add washed rice.

    2. When the rice has absorbed the fat and looks pale yellow, add boiling water and boil rapidly for 10 minutes.

    3. Lower the heat to a mere glimmer, cover the rice with greased greaseproof paper and leave until the water is absorbed and the rice is cooked - do not stir, but shake the pan from time to time.

    4. Meanwhile fry egg and banana for each person.

    5. Pile the rice in a very hot dish, arrange the bananas and eggs on it, and garnish the latter with a mixture of finely chopped raw onion, chopped tomato and chopped parsley.
